lets share.

It's fall... which means my crockpot is in use at least 3-4 times a week.

It's a good thing I have two :)

Tonight's crockpot meal is Chicken tortilla soup. YUM.

I believe I've shared that recipe on here before... but due to the disorganization of this blog (I'm working on labeling and archiving my posts every night!) I have no clue where that recipe is...

Anyways, I thought I'd share what we're eating on Halloween. It's been a tradition since Ryan and I were first married. I remember flipping through my cookbooks and recipes, trying to find something that sounds like "Halloween." And I saw... "Pirate Stew!" That's sooo Halloween :)

And here's the recipe:

take out your crockpot.

and make sure you have the following on hand and ready to go:

3/4 cup (I use a full cup because I like onions. a lot.) diced onion

1 lb. ground beef (this year we'll be doing turkey)

1/4 cup uncooked, long grain rice

3 cups raw potatoes, diced

1 cup diced celery

2 cups (cans) of kidney beans

1 tsp salt

1/8 tsp pepper

1/4 tsp. chili powder

1/4 tsp. worcestershire sauce

1 cup tomato sauce

1/2 cup water

WOAH that sounds like a lot of stuff... :) But I promise... its worth it :)

1. Brown onions and ground beef (or turkey) in skillet, drain all that nasty fat away :)

2.Layer ingredients in your crockpot in the order given... example: first goes in the g.beef & onions, then the rice, potatoes, etc.

3. Cover, and cook on low for 6 hours. Or until potatoes and rice are cooked :)

The recipe doesn't call for cheese but we all know that nothing is truly good without some kind of cheese... SO I always top my bowl off with some good ol' cheddar. :)

OK... that sounds yummy! My fave right now is:

White chicken Chili

1-2 Chicken breast (boiled)
1 jar of salsa
1-2 cans of Northern beans(I do 2 b/c I like beans)
3/4 cup of sour cream
8 oz of cheaddar cheese
1 can of chicken broth
Cumin to taste ( I usually add chili powder too)...

Throw it in the crock pot for 4-6 hours (or until it smells too good... you just have to eat it! )

A favorite here (I have to double this for our family)...

Angel Chicken

1 1/2 pounds boneless/skinless chix breast
1/4 cup butter
1 envelope Italian salad dressing mix
10oz can Golden Mushroom Soup (have used Cream Mushroom, too)
1/2 cup dry white wine or grape juice
8oz cream cheese
angel hair pasta (make this just before serving)

Place chicken in crockpot.

In a saucepan (or microwave), melt the butter and cream cheese. Stir in the salad dressing mix, soup, wine/juice. Combine until smooth. Pour over the chicken.

Cover and cook on low for 4-5 hours. (I just cook until whenever we are ready to eat.) Serve chicken and sauce over hot pasta. Sprinkle with chives if desired.

Everyone loves this!

We also have a couple of pork roast recipes that everyone likes, and the Zuppa Toscana recipe from Olive Garden converts to the crockpot well, too.

This is a new one I just found online and I've gotten so many compliments!!

Beef Stew
2 pounds of beef chuck or stew meat
1/4 cup flour
1 1/2 tsp salt
1/2 tsp pepper
1 1/2 cups beef broth
1 tsp Worcestershire sauce
1 clove garlic (I just sprinkle garlic powder, its easier!)
1 bay leaf (I just sprinkle basil or parsley since I don't ever have bay leaves)
1 tsp paprika
1 small bag of baby carrots
2 cans of potatoes (use canned potatoes because they don't get soggy!)
1 onion (cut in whatever size you want)

Place meat in crock pot and pour flour, salt and pepper over the meat. Stir to coat the meat with the flour and then just dump the rest of the ingredients in. Mix it well and cook on low for 6ish hours.

It sounds like a lot of work but its not! Trust me, I don't use recipes that take tons of time because I'm not a big fan of cooking :) Sometimes I thicken the broth once it's all done, depending on how thick you want it :) But, everyone LOVES it and asks for the recipe when I make it! Try it :)

Jules- I am working so so so hard on labeling my blog- I have over 600 posts though- its seriously taken me weeks. I should be finished labeling by the end of this week though... and then you will be able to find "food" like the chicken parm. :)
