Recipes, recipes, recipes...

I've had lots of recipe requests lately! Perhaps along with my Monday meal posts I should just start including the recipes? What do you think?

At any rate, on with the goods.

The first Ahhhhh-MAZING recipe is:
coconut chicken with yummy yam fries
4 chicken breasts (I use the thin ones!!! They cook up SO much better!)
Salt & Pepper
Canola Oil
1/3 cup fine dry plain breadcrumbs
1/3 cup flaked coconut
1/4 cup butter, melted

Sprinkle the chicken with salt & pepper. Rub oil on the chicken.

Mix the breadcrumbs and coconut together. Roll the chicken in the coconut mixture.

Place your chicken in a lightly sprayed baking pan and drizzle it with the butter.

Bake at 350 for 40 - 50 minutes...until your chicken is done.

Place a piece of foil over the dish for the first half of the cooking- then remove and let the coconut brown up a bit.

I usually serve this dish with some YUMMY YAM fries. (a very tropical meal, don't ya think?)

Here's the recipe for the fries:
2 sweet potatoes (or yams)
Olive oil
Salt
Pepper
Paprika

Preheat oven to 375 degrees.

Peel and slice sweet potatoes. Toss in a bowl with olive oil, salt, pepper and paprika to taste and mix. Spread evenly across a baking sheet. Bake for 10 to 15 minutes, turn fries and bake another 10 minutes.

Also, try experimenting with other herbs and spices. We've seen these done with cumin, lime, cinnamon, rosemary, garlic and a whole host of other spectacular seasonings (but not all at once!)

The second recipe that I've been asked about is the Broccoli cass. This is from the Duggars website. You can find the recipe HERE. I add rotisserie chicken to mine and since its basically a cheesy broccoli dish of delight, I most definitely use BROWN rice. I don't even want to know the fat content of the velveeta! YIKES! Anyways, we just made this tonight and it was excellent as always. Maeve tested and approved!

Thank Ashley for posting your recipies...don't forget about the crock meatloaf,I'm trying your Mexican hot dish one tonight since Joe and Benjamin have people coming over for dinner!-wish me luck! lol

Definitely tried the Mexican Hot Dish last night for me, Kev, and his roommate. I added corn like Becky suggested to add a little nutritional value. Verdict is...good, all the way around. I will be trying it again :)

I am excited to try the coconut chicken.

BTW, Lindsey and I thought we could meet you in Lansing to pick out a dress for Maeve, grab lunch or dinner, and catch up. Any idea when would be good for you?

you'll LOVE the mex. dish and really, its impossible to mess up! So you'll be fine w/ guests coming :)

I was planning on posting the crock pot meatloaf along with your question at some point today... so stay tuned ;)

yea glad you liked it Ang! :) It seriously has become one of our faves. - ever since I found the recipe, its been on our menu once a week! :)
