Grilled Cheese With a Twist!

If your kids are anything like mine, they LOVE their grilled cheeses! It's Maeve's ultimate favorite food- she can eat one anytime, any place! The past few weeks I've been getting a tad lazy in the kitchen as far as dinners are concerned. I've been looking for very QUICK and easy recipes. I came across one for grilled cheeses- and I don't think I can ever eat a "normal" grilled cheese again! They are THAT good! I thought I'd share the goodness:

Crispy Baked Grilled Cheeses

*Preheat oven to 400 degrees

*prepare grilled cheeses as normal (butter both sides of bread, place cheese in middle)

*arrange the sandwiches on a cookie sheet and sprinkle the tops with Parmesan cheese

*Bake for 8 minutes, flip the sandwiches and sprinkle the other side with Parm. cheese. Bake for another 8 minutes.

*They should be golden brown and super crunchy when you take them out- if they're not, bake them for a few more minutes. I've found it depends greatly on the amount of butter you use. If you use the butter sparingly, they crunch up better, if you lather it on (like I did the first time...oops) they tend to take longer to get that CRUNCH.

*I've been making tomato soup to go with them and all 4 of us (baby in my belly included!) have really been enjoying this EASY, delicious meal!! :)
