It's a MAM!

I think I've decided to come up with a regular recipe posting "thingy." Lots of you have asked for recipes we use (or I, rather :) so I thought I'd post a MAM (Maeve Approved Meal) whenever we came across a new one. Maeve is my toughest critic when it comes to cooking and when I see HER enjoying a meal, I know its gotta be worth sharing!

Last night, we had a MAM! And here it is:

Cheesy Chicken Vermicelli
1 lb. cooked pasta (I have a stockpile of whole grain linguine in the basement, so I used that)

3 cups of cooked chicken, cubed

5 cups of sharp cheddar cheese, shredded

Italian seasoning

S&P

1 Cup of milk


Directions:
Grease a baking dish (I used an 8x8 but it was a tight fit!)

Layer pasta, chicken, cheese, seasonings and S&P. I got 3 layers in. (and make sure to layer in that order- pasta, chicken, cheese, seasonings/S&P)

After you have all your layers, top with remaining cheese. Then pour the 1 cup of milk over your entire dish, making sure to pour it evenly in each area... (I had to use a little more than a cup because I dumped a big part of it right in the middle of the dish, but it still worked out fine).

Finally, cover with foil, and bake at 350 for 4o minutes. Take off the foil and cook for a remaining 5 minutes.

EASY PEAZY JAPANEEZEY! Really, this recipe was so easy it should be wrong! haha :) But its a great, quick, easy go- to type of dinner that was definitely a hit with Maeve. And it can't be ALL THAT BAD for you, right? I used whole wheat pasta, chicken, fat free milk and low fat cheese... sooo... I figure it really isn't too sinful! :)
